Having identified (and labelled) all the wiring here, I'm finally able to start connecting some of the circuits back up to find out what actually works and doesn't. Here we've got working main, dip and side headlight circuits. I've confirmed that there's power getting to the indicator circuits as well in addition to the hot side of the horn and fuel gauge circuits.
