Estimates of ABV using Stochiometic (usually for 18% or lower ABV its within .002 SG and good enough for my use). Started 26.1 % Brix, and finished in 6 days down to 11 brix, for 14.6 est ABV%. Temps were kept at 80-84 for 2-3 hours, then outside and cooled down at night to about 70, brought in side and into sink with water to slowly cool down and stay at about 65-68F for the duration of the ferment. New use of sink, liked it, like using the outside cold as well to cool down the must like a big freezer/fridge.
